Mojo Chicken and Fried Bananas

I saw a recipe for pork chops with some of these ingredients and decided to try it with chicken instead, since obviously we can't get pork chops here! : ) (adapted from here). It was delicious! I served it with fried bananas, which turned out to be a great idea. The chicken and sauce are very peppery and pungent, and the bananas were a nice sweet contrast. Plus, it was pretty quick and easy!

Mojo Chicken
4 chicken breasts, bone-in if possible
1 1/4 c. orange juice
3/4 c. fresh lime juice (okay, okay, so I used the Dabur Lemoneez!)
1/4 c. vinegar

1 t. black pepper
2 t. salt
1 t. ground cumin
1 t. garlic powder
1 t. onion powder
1 t. oregano
3 T. oil
2 small red onions, chopped
4 garlic cloves, chopped
1 T. white wine vinegar
3 T. water
2 chopped tomatoes
Fresh cilantro for garnish

1. In a large ziploc or shallow bowl, mix together 1 c. orange juice, 1/2 c. lemon juice, and 1/4 c. vinegar. Fork the chicken all over and set it in the marinade for 1 hour in the fridge.

2. Combine all the spices together and mix. When the chicken is done marinating, rub it generously all over the chicken breasts.

3. Heat the oil in a large skillet. Place the chicken breast in the oil and brown, turning after a minute or two to sear both sides. Once browned all over, add the onion and garlic and cook until soft. Next add remaining 1/4 c. orange juice, 1/4 c. lemon juice, and white wine vinegar and water. Keep heat medium high and cover and cook... I'd say for about 10-15 minutes. Check on it often to make sure the sauce isn't reducing too quickly. If so, lower the heat.

Meanwhile, make your fried bananas!

1. Heat oil in a frying pan, not too deep, but deep enough to come about halfway up the banana slices. (Use a small sauce pan to use less oil!) Meanwhile, slice up your bananas either in slices, or in quarters. If sliced, make sure they're at least 1/2 inch thick! The firmer they are the better, get 'em when they're still a little green... (yeah right, I know!)

2. Place about 1/4 c. milk in a bowl. In another bowl, place 1 c. flour and 1 T. castor sugar and mix to combine.

3. Drop banana pieces in bunches in to the milk, then into the sweet flour. Place them in the oil, cook for about one minute, then turn, cook another minute, and remove to a paper towel.

4. Serve the chicken with the nice thick sauce spooned over the top, topped with chopped tomatoes and cilantro, and bananas on the side. Yummm...

Once your bananas are done, your chicken should be done too. This was enough food for the four of us, but you could also serve it with a salad or green veggie to round it out better. :) Hope you enjoy!

What We're Eating This Week

So several have said they enjoy the posts with our menu for the week... Thought I'd do it again. This weeks menu is a little shorter because we're taking a little weekend getaway Friday to Sunday to Udaipur! I'm so excited. I've wanted to go there for years! I'm also looking forward to eating in a few recommended restaurants while we're there... but until then, here's what we'll be digging into this week:

1. Chili and Cornbread

2. Chicken with Mojo sauce and steamed veggies

3. Cheese and Pepper Quesadillas, chips and salsa

4. Buffalo Chicken Sandwiches with potato wedges (yep, the ones in a bag!)

5. Kushiri and Spinach Salad
